Pin-ya-tuh. Sink-o-day-my-yo. To-po-chee-ko. Ta-kee-lah. Hola Mayo! One of our favorite refreshers here at our office is the Mexican-made, super fizzy mineral water – Topo Chico. At our neighborhood taco shop, Baja Burrito, we’ve been known to bypass the burrito completely, eyes on the prize for that cold bottle of bubbles.It’s still the first week of May. We’re keeping the party going and adding Topo Chico to an all-natural margarita recipe in a new formula that’s all our own. See below for our recommendations for this simple drink with a little added “pop.”
• 1 & 1/2 oz quality tequila
• 3/4 oz Cointreau (Orange liquor)
• 1/4 oz light agave nectar or simple syrup to taste
• 1/4 oz Topo Chico
Combine lime juice, Topo Chico, Cointreau, Tequila and agave syrup (or simple syrup) in cocktail shaker with ice. Shake well, like you mean it, then pour over ice. If you like salt with your margarita, wet the rim of your glass with lime juice and then coat it by flipping the glass upside down on a plate holding the salt of your choice. Adjust the agave/simple syrup to your taste.
